More Easter Dinner Ideas

Thinking about Easter Dinner always brings back fond memories of sitting around my grandparents' table on Easter Sunday, preparing to pass around the ham, mashed potatoes and macaroni and cheese baked casserole. My grandmother is a farmer's wife so Easter Dinner included lots of hearty side dishes to go with the ham.

These days there are so many diverse dining cultures and food preferences coming together at dinner time, whether it be for a family Easter Dinner or simple guest dinner. I've gathered a few other alternatives to Easter Dinner below to help you - in the event that planning a diverse Easter Dinner falls on your shoulders!

Mardi Gras Madness!

Happy Mardi Gras Y'all!  Whether you plan to whoop it up next week on Tuesday, or prefer a more subdued celebration, I've put together some colorful dishes to help you pass the time!  Share them with a crowd or keep them to yourself.  Either way I think you will enjoy my "Fat Tuesday" contributions.

BLT Pasta Salad
It's colorful and has bacon and pasta in it!  What could be more enjoyable for lunch or a light dinner on Mardi Gras than a BLT Pasta Salad?  (Just don't use it as an excuse to party too hard!)

Chicken Cacciatore
According to my research, Jumbalaya and Gumbo are traditional Mardi Gras fair, but I am sure the Italians won't mind me serving up some cacciatore on Fat Tuesday just for a little fun!

Ham & Cheese Stuffed Potatoes
And if you are a down home American traditionalist foodie, you will appreciate this delicious carb concoction come Tuesday.  It's an all in one American grass-roots salute to Mardi Gras!  Yeehaw!

Fun-ky Chicken Dishes!

One of the things I love most about chicken is it's versatility.  You can pair it with so many different ingredients to create lovely, mouth-watering dishes for your family or for yourself.  Chicken is fun to use in Asian, Mexican, Italian, and American recipes, and is very hard to mess up.  I chose a few funky chicken recipes for today that I think will please your taste-buds and your budget.

Cashew Chicken
Whether you put "mandarin, orange, or cashew" in front of the chicken, the word on your tongue will be "mmm!"  I love Asian inspired recipes as they have just the right combination of exotic flavor and spices balanced with the tell-tale taste of chicken.  Chicken makes it less scary to try new dishes too!

Chicken and Dumplings
If you are more of an all-American type of cook, chicken paired with dumplings, potatoes or other vegetables, will please your palate every time.  Less spicy than Mexican or Asian dishes, chicken and dumplings is a traditional comfort food that will soothe and relax you.

Chicken Cacciatore
And, if you are feeling a little more romantic, Chicken Cacciatore, Chicken Fettuccine Alfredo, or Chicken Marsala, will do just the trick.  From the Italian style family of recipes comes dishes that spotlight pasta, chicken, tomatoes and cheese.  Consequently I feel these should actually make up the four basic food groups.  (I could live on fettuccine.)

Belly Thrillers

Talking to a friend recently about must see movies and "thrillers," it occurred to me that's exactly what we need for the winter months - Belly Thrillers.  Belly thrillers are recipes and meals which 1. are hearty, 2. are healthy, and 3. thrill the belly!

Beef Pasta and Mushroom Soup
In honor of winter and January, I am pleased to introduce our first belly thriller: Beef Pasta and Mushroom Soup.  Soup, by its very nature, is a belly thriller.  Soup is warm and warms the body from the inside out.  Soup is comforting and can be hearty at will.  And soup is thrilling (at least to me) and filling!

Bow-tie Pasta with Chicken & Broccoli

Our second belly thriller is Bow-tie Pasta with Chicken and Broccoli.  Chicken and broccoli are healthy and hearty and get two thumbs up.  But the thrilling part of this recipe is definitely the Bow-tie pasta.  Change out your boring old noodles (whatever staple they may be) and exchange them for some BOW-tie!  (Not to be confused with Tiebow.)

Buffalo Chicken Tacos
Last, but never least, anything with the word Taco in the recipe title is automatically on the belly thrillers list.  What thrills me about these tacos is the buffalo chicken element of surprise.  I've done beef tacos, fish tacos, and chicken tacos...but it never occurred to me to spice things up with some buffalo-wow.  A must-taste belly thriller this season!

Chicken, Not Just For The Birds!

The birds may have flown south for the winter, but the chickens are still plentiful and plenty full!  If you are short on ideas for dinner this week, or wanting to spruce up your staple go-to meals, try out one of our fresh and fun chicken recipes.

Chicken Broccoli Bake

Do yourself a favor this year, and investigate recipes and meals that are quick to prepare, easy on your budget, and crazy tasty.  Casseroles, crock pots (aka slow cookers), and freezer meals are three great ideas for feeding your family healthy stuff that doesn't overtake your evening hours to prepare.

Baked Ranch Chicken

Get back to basics too.  Baking does not equal boring.  Baked chicken is very nutritious and can be very simple to prepare.  But how to make it worth tasting?  Revisit your spice rack, pantry, and salad dressing shelf in the refrigerator for some clever ideas for pleasing your family's taste buds.  Ranch dressing, seasonings, BBQ sauce and even jams/jellies can be refreshing ingredients for taste bud wake up.

Chicken & Orzo Skillet

Often a staple in Greek and Turkish cuisine, Orzo is a "big rice" way of rounding off a Chicken dinner.  Branch out in 2012.  Leave your old rice, pasta, and potatoes for another day; and dig into a new side dish that could also be better for you (think whole grains vs. white starch).

That's all I can say for Chicken at the moment and it's probably plenty for now.  I don't want to cause Chicken overload.  Enjoy trying some new recipes in 2012 and be adventurous!  Remember, we love feedback and photos!

Exciting Side Dishes!


Thanksgiving is officially just around the corner (next Thursday) and that means thawing the turkey, crafting a menu and pie design...just to name a few tasks at hand. You must also decide which side dishes to save and which to scrap in favor of something new. (Yes, use your family as guinea pigs!) Chicken Spaghetti

Today's recipe is...

Chicken Spaghetti

1 med. chicken, cooked and boned
1 tbsp. margarine
1/2 lg. green pepper, chopped
1 med onion
1/2 lb. fresh mushrooms, sliced, or 1
(4 oz.) can mushrooms, sliced
2 cans cream of mushroom soup or cream of chicken soup
2 cans cream of tomato soup
1 can chicken broth
1 (7 oz.) jar green olives, drained
2 tsp. Worcestershire sauce
3 drops Tabasco sauce
1 tsp. salt
1/4 tsp. pepper
2 (7 oz.) pkgs. spaghetti
5 oz. sharp cheddar cheese, grated

Cook spaghetti according to package directions. Melt margarine in large pan and add green pepper, onion and mushrooms. Saute them together until tender. Add the soups, broth, olives, worcestershire sauce and tabasco. Simmer gently for 15 minutes and then add chicken, drained spaghetti and salt and pepper. Remove from heat and add 3/4 of the cheese. DO NOT cook after adding the cheese. Use the remaining cheese by sprinkling it over the spaghetti after pouring it into serving dish.

Ground Beef Stroganoff

Today's recipe is...

Ground Beef Stroganoff

1 lb. ground beef
1 pkg. (5.8 oz.) gravy mix
1/4 c. chopped onion or 1 tbsp. instant minced onion
1/2 c. (4 oz. can) drained mushroom stems & pieces
3/4 c. water
1/2 c. sour cream

In 1 or 1 1/2 quart casserole, crumble ground beef. Cook, uncovered, 5 minutes, stirring once; drain. Stir in gravy mix, onion, mushrooms and water. Cook, covered, 7 minutes. Stir in sour cream and let stand, covered, about 1 minute to heat through. Serve over rice or noodles. 4 servings.

Italian Pasta Salad

Today's recipe is...

Italian Pasta Salad

2 pounds cooked and cooled pasta
1 jar drained artichoke hearts
1 can green olives
1 jar drained giardiena salad (in the pickle aisle and spelled correctly on the jar)
4 shredded carrots
4 chopped celery stalks
one bottle Newman's Own Italian Dressing
1/2 cup breadcrumbs

Mix all of the above together.

Pasta Recipes for National Noodle Month

Pasta Salads


Caesar Pasta Salad

1 lb. pasta -- bowtie or spiral
1 pint grape tomatoes -- halved or quartered
4 green onions -- sliced on the bias (4 to 5)
1/2 cup red onion -- minced
1 cucumber -- peeled, seeded and cubed
juice of 1 lemon
12 oz. Caesar dressing -- approx.
1/2 cup shredded Parmesan cheese -- or more to taste
kosher salt and fresh black pepper -- to taste

Cook pasta in salted boiling water. Drain and rinse under cold water.

Meanwhile, in a large bowl mix together tomatoes, green onions, red onion, and cucumber. Add pasta, lemon juice, about 8 oz. of dressing, and salt and pepper. Chill several hours. Before serving stir in the rest of the salad dressing.


Szechwan Pasta Salad

1/3 c. vegetable oil
2 tsp. red wine vinegar or to taste
1 tbsp. honey
2 tsp. sesame seeds
1 clove garlic, crushed
3/4 tsp. hot pepper sauce (Tabasco)
1/2 tsp. grated ginger
1/4 tsp. salt
3 c. fresh broccoli, florets & stems thinly sliced
2 c. cooked chicken, cut in strips
1/2 lb. bow tie pasta, cooked & drained
1 red pepper, cut into strips
1/4 lb. snow peas, washed & trimmed
2 scallions washed, cut in 1" pieces & julienned

In large bowl combine oil, vinegar, honey, sesame seeds, garlic, hot pepper sauce, ginger and salt; mix well. Add broccoli, chicken, pasta, red pepper, snow peas and scallions. Toss to coat evenly. Cover, chill before serving.


Noodle Soups


Beef Noodle Soup

1 pound cubed beef stew meat
1 cup chopped onion
1 cup chopped celery
1/4 cup beef bouillon granules
1/4 teaspoon dried parsley
1 pinch ground black pepper
1 cup chopped carrots
5 3/4 cups water
2 1/2 cups frozen egg noodles

In a large saucepan over medium high heat, saute the stew meat, onion and celery for 5 minutes, or until meat is browned on all sides. Stir in the bouillon, parsley, ground black pepper, carrots, water and egg noodles. Bring to a boil, reduce heat to low and simmer for 30 minutes. Serves 6 to 8.


Amish Chicken Noodle Soup

3 lb. chicken
2 quarts water
2 tsp. salt
1 1/2 c. chicken stock
2 c. celery, chopped
2 c. carrots, chopped
1 tart apple, chopped
1 c. onions, chopped
dash pepper
4 c. egg noodles

Place chicken in kettle with 2 quarts water. Cover until tender (about 2 1/2 hours). Remove chicken from kettle and strain broth. Debone chicken and return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, and pepper and cook until vegetables are tender. Add noodles and cook 8-10 minutes.


Macaroni Dishes


Southwestern Macaroni

1 lb ground beef
1/2 C chopped onion
1/2 C chopped green bell pepper
2 tsp cumin
2 tsp chili powder
1/4 tsp pepper
1/2 tsp garlic powder
2 C tomato juice
2 C water
1-1/2 C uncooked elbow macaroni

Brown meat, onion and bell pepper in large skillet, drain off fat. Stir in the remaining ingredients.. Bring to boil, stirring occasionally. Reduce heat, cover and simmer about 15 minutes, stirring occasionally. Uncover and add more water is necessary. Cook to desired consistency. Serves 6


Baked Ham And Macaroni And Cheese

1/4 lb. ham, sliced thick
1/4 lb. Mozzarella
2 oz. fontina cheese
2 oz. Provolone cheese
1 oz. Parmesan cheese (1/4 c.), grated
3 tbsp. butter or margarine
2 tbsp. flour
2 c. milk
1/2 lb. rigatoni or other pasta
Salt & pepper
1/4 c. dry bread crumbs

Dice ham. Grate Mozzarella, fontina and provolone coarsely. Grate Parmesan finely. In a saucepan, melt 2 tablespoons butter over low heat. Stir in flour and cook, stirring frequently until it bubbles. Whisk in the milk, bring to a boil, stirring constantly and continue cooking for a minute. Stir the ham and cheeses into the sauce. Heat oven to 375 degrees. Cook the macaroni in boiling salted water until almost done. Drain and mix with the sauce. Season to taste with salt and pepper. Butter a 1-1/2 quart baking dish and pour in the macaroni mixture. Cover loosely with foil and bake until bubbling, about 25 minutes. Remove foil. Heat the broiler. Melt the remaining 1 tablespoon butter and toss in bread crumbs. Scatter the crumbs over the macaroni. Brown the dish in broiler for about 5 minutes and serve.


Spaghetti Recipes


Crock Pot Tetrazzini

1 bunch green onions, chopped
1/2 c. green olives or pimiento, chopped
1 c. chopped celery
1 bell pepper
1/2 lb. fresh mushrooms, sliced
Parmesan cheese
3 c. chicken, turkey, or ham, cooked and cubed*
1 tbsp. Mrs. Dash or chopped parsley
2 to 3 c. liquid**
1 (8 oz.) pkg. spaghetti, broken into sm. pieces

*(The meats may be mixed to utilize holiday left overs). **(Use small amount of broth, combined with water, or 1 can chicken soup). Cook, rinse and drain spaghetti. Cook onions, bell pepper, and celery 1 to 2 hours, with seasonings (may include salt and pepper to taste). Add meat, then spaghetti. Add mushrooms and olives last. Sprinkle with cheese.


Mexican Spaghetti

1 lb. ground beef
1 tbsp. Worcestershire sauce
1 tbsp. Tabasco
1 tbsp. onion salt
1 tbsp. garlic salt
Small can tomato juice
2 c. cooked spaghetti

Brown ground meat; add next 4 ingredients and stir. Add tomato juice; simmer for about 5 minutes. Add cooked spaghetti and simmer for 10 minutes more. Serve with toasted garlic bread. You may decrease the onion and garlic salt but it really is good if you don't. I also make a salad to go with this.
