Jammin' Fruity Ideas

Do you can? Put up preserves? In my family it's a time-honored tradition to make jams, jellies, preserves, syrups and pie filling with all sorts of fruits. (We can veggies too but that's for another post!) My great grandmother and grandmother taught my mother [and me] to can and preserve and someday I hope to teach my future daughters-in-law how to do it too, if they don't already know how.

Canning is not only a practical way to store up your family's favorite fruits for winter use, but it's also a fun way to connect or re-connect with friends and extended family. There's nothing quite like sweating together over a boiling pot of jam to help bond peeps together. Get some friends or relatives together and save the fruit for later in the form of jams and jellies, using some of our simple free fruity recipes.

Oh and I threw in the blackberry smoothie recipe to help you cool off after a day of canning - enjoy!

More Summer Snacks!

With long summer days and warm nights, it seems like the phrase "I want a snack please!" is a never ending, ever repeating sing-song loop playing in my head and in my kitchen! I'm sure they pause sometimes. I'm sure my little boys don't say it over and over and over again. But it sure feels like it.

Peach Blackberry Crumble

Today's recipe is...

Peach Blackberry Crumble

TOPPING:
1 c. Pillsbury's BEST all-purpose or unbleached flour
3/4 c. sugar
1/4 c. margarine or butter, softened
1 egg, slightly beaten

FILLING:
1 c. sugar
3 tbsp. cornstarch
1 c. water
1/4 tsp. almond extract
16 oz. pkgs. slice, frozen peaches, thawed
1 c. fresh cranberries
1 c. frozen blackberries

Heat oven to 400 degrees. Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour and 3/4 cup sugar. Using pastry blender or fork, cut in margarine until mixture is crumbly. Stir in egg; mix well. Set aside. In small saucepan, combine sugar and cornstarch; add water. Cook over medium heat

until mixture boils and thickens, stirring constantly. Stir in almond extract. In 8-inch (2-quart) square baking dish, combine peaches, cranberries and blackberries; stir in hot cornstarch mixture. Crumble topping over fruit mixture. Bake at 400 degrees for 40 to 45 minutes or until topping is golden brown. Serve warm with sweetened whipped cream, sour cream or ice cream, if desired. Makes 9 servings

Blackberry Bundt Cake

Today's recipe is...

Blackberry Bundt Cake

1 box white cake mix
3/4 c. Crisco or Puritan oil
4 eggs
1 pkg. blackberry (or wild strawberry) Jello
1 pt. frozen blackberries or strawberries, sweetened to make 1 c. juice

Mix all ingredients together and bake at 350 degrees until done.

GLAZE:
Mix 1 1/2 cups confectioners sugar with 1-1 1/2 cups of berries.
Drizzle over cake when cool.
