Mardi Gras Recipes


Mardi Gras is on February 24th, also known as Fat Tuesday. This is the day before Ash Wednesday when the fasting begins. There's often a celebration that includes many different foods. Try a few of these recipes with your family!

I know times are tight right now, that's why I wanted to share this frugal version of a tasty Mardi Gras meal. No need to run out and buy a bunch of ingredients you don't already have on hand. Try it out this Tuesday and let us know how it was!

Mardi Gras Beans And Rice

1/2 lb. pork sausage, hamburger or sliced wieners
2 c. water
1 can tomatoes
1 can kidney beans, undrained
1 c. uncooked regular rice
1 c. celery, chopped
1 envelope Sloppy Joe mix

Brown meat in large skillet (if wieners are used, heat lightly in 2 tablespoons oil or margarine and do not pour off drippings). Add remaining ingredients; stir and mix well. Cover, simmer for 30 minutes, stirring constantly.


Try this recipe for a tasty snack:


New Orleans Pecan Pralines

2 c. firmly packed brown sugar
1/4 c. water
2 1/2 c. mixed pecans (pieces & 26 halves)
1 tsp. butter

Combine sugar and water in a 2 quart saucepan; heat to boiling, stirring constantly. Stir in pecans. Cook until mixture reaches the soft ball stage (235 degrees). Remove from heat. Stir in butter. Immediately drop by tablespoonfuls onto waxed paper. Let stand until firm. 

Yield: about 1- 1/2 dozen.


After dinner make this New Orleans favorite:


Bananas Foster

3 ripe bananas
1 tbsp. butter
1 c. caramel topping
2 tbsp. banana liqueur
Vanilla ice cream

Quarter bananas and place in microwave dish. Add 1 tablespoon butter, caramel and banana liqueur. Mix well. Microwave on high approximately 3 minutes or until begins to bubble and bananas or slightly soft. Pour over 2 scoops or ice cream and serve. 

Serves 6.
