Tasty Baked Recipes

I love to bake! Usually it's something sweet and crazy with carbs - which is not conducive to managing your figure or overall health. (I admit I'm a bit of a dessert addict.) So to cure my craving for baking, I've collected a few tasty baked recipes that don't all include the words "cookie" or "cake" in the title.

Memorial Day Desserts

Memorial Day and its three-day weekend mark a special time to remember service men and women and our passed loved ones. It also marks the beginning of Summer (here in the Northern Hemisphere) and warmer weather. That means you may be getting some yummy invitations to backyard grilling parties, picnics or potlucks outdoors.

Baked Goodies & Their Friends!

Today seemed like a good day to take a break, and enjoy all things baked!  Leading the parade of baked goodies is our very own Baked Donut Muffins...They are delicious!

Baked Pretzels
After muffins must come...pretzels, a carb-packed salty snack that will tingle your taste buds!

Basic Biscuits
Not to be undone by less popular baked goodies, our basic biscuit recipe is reliable, repeatable, and yummy!

Apple Jelly Recipe
I also thought it would be nice to include some accessories for our baked goodies, lest they feel too plain or just plain bare!  Our apple jelly recipe is a nice way to say "thank you" or hand out as a parting gift at your next get-together.

Date Jam
And for a little spice, try our date jam recipes.  Dates are a succulent way to celebrate more exotic fruits, so why not turn them into jam to enjoy all year?  Enjoy our baked blog post!

More Christmas AM Ideas!

Let the countdown begin!  (No, I do not have all my shopping, wrapping, or baking done.) There are eight days until Christmas by my calendar, which means...you still have time to perfect your Christmas menu.  Are you in the keep-it-simple-sweetie (KISS) camp?  Or do you favor a more sophisticated approach to your holiday recipes?

Christmas Morning Breakfast...

With Christmas morning 11 days away, it's not too early to think about Christmas breakfast!  The shopping and wrapping and paper cuts and menu planning that go into building Christmas for your family should not be attempted on an empty stomach, and neither should Christmas morning!

Do you already have specific family favorites that you make for Christmas breakfast?  Or are you more of a brunch kind of person?  Do you like to get fancy with mimosas and streusel or keep it simple with black coffee and chunky gooey cinnamon rolls?

Cranberry Muffins And Creamy Orange Spread

Today's recipe is...

Cranberry Muffins And Creamy Orange Spread

2 cups all-purpose flour
7 tablespoons sugar
2 tablespoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/2 cup margarne, melted
1 egg beaten
3/4 cup chopped cranberries
1 (8 ounce) package cream cheese
1 tablespoon orange juice

In a large bowl, combine flour, 4 tablespoons sugar, baking powder and salt and mix well. In medium bowl, combine milk, margarine, and egg. Pour into four mixture, mixing just until moistened. In a small bowl combine 2 tablespoons sugar and cranberries. Fold into batter. Spoon into greased 2-1/2 inch muffin cups, filling 2/3 full. Bake at 400 degrees for 20 to 25 minutes or until golden brown.

Creamy Orange Spread
In a small bowl combine cream cheese, remaining 1 tablespoon sugar and orange juice until well blended. Cover and chill. Serve with muffins.

Almond Pear Bread

Today's recipe is...

Almond Pear Bread

2 c. sugar
3/4 c. corn oil
3 eggs
3 c. flour, all purpose
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 c. fresh grated peeled pears (apples may be substituted when pears are not in season)
1 c. chopped almonds
1/2 tsp. vanilla
1/2 tsp. almond flavoring

Cream sugar, oil; beat in eggs. Sift flour, baking powder, soda, salt and spices. Add grated pears and beat on medium speed until well mixed. Mix in flavorings and almonds until well blended. Bake in 2 greased, floured 9 x 5 x 3 inch loaf pans at 325 degrees for 1 hour and 10 minutes or until done to the touch. Make 2 loaves.

Bisquick Zucchini Bread

Today's recipe for makes a great muffin too! Perfect for breakfast or snacking.

Bisquick Zucchini Bread

2 C. Bisquick Mix
1 1/2 C. Shredded Zucchini (1 medium)
3/4 C. Sugar
1/4 C. Vegetable Oil
3 Eggs
1 tsp. Vanilla
2 tsp. Cinnamon
1 tsp. Nutmeg
1/2 C. Chopped Nuts(or raisins)

Heat oven to 350 and Grease the bottom of 9x5x3 Loaf Pan. Beat all ingredients in medium bowl with electric mixer at low speed for 30 seconds, scraping bowl constantly. Beat at medium speed for 1 minute, scraping bowl occasionally. Pour into pan. Bake 50 to 55 minutes or until toothpick comes out clean. Cool 10 minutes. Loosen sides of pan and remove and place on wire rack top side up. Cool completely for about 2 hours before slicing. Wrap tightly in plastic wrap and stor at room temperature for 4 days or refrigerate and store for 10 days (if it lasts that long). Great for making ahead and freezing.

Almond Poppy Seed Muffins

Today's recipe is a wonderful addition to your quick bread and muffin recipe collection.

Almond Poppy Seed Muffins

3 Cups Flour
1-1/2 C. Milk
2-1/4 C Sugar
3 Eggs
1-1/2 Teaspoons Baking powder
1/2 Teaspoon Almond extract
1-1/2 Teaspoons Salt
1-1/2 Tablespoons Poppy seeds
1-1/2 Cups Vegetable oil

Preheat oven to 350 F grease or paper line two 12 cup muffin tins - combine flour-sugar-baking powder-salt in bowl; mean while whisk oil-milk-eggs-extract in another bowl till smooth Add the dry ingredients mixing till moist - Very gently stir in all the poppy seeds.

Fill muffin tins, and bake for approximately 30 minutes. Serve warm or cold - Made these last summer and they were very moist and very flavorful.
