Memorial Day Desserts

Memorial Day and its three-day weekend mark a special time to remember service men and women and our passed loved ones. It also marks the beginning of Summer (here in the Northern Hemisphere) and warmer weather. Who Needs Resolutions When You Have...

Such great recipes at your fingertips?  Put off the resolutions until January 2nd-ish, and try one of these delicious dishes from Alicia's!  These recipes are perfect for ringing in the New Year.  We'll pretend they are fat-free and calorie-free, just for now.

Pumpkin-cream Cheese Jelly Roll

Today's recipe is...

Pumpkin-cream Cheese Jelly Roll

ROLL
1 cup all-purpose flour
1-1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
4 each eggs, at room temperature
3/4 cup granulated sugar
3/4 cup canned pumpkin pie filling
1 confectioners' sugar

FILLING
12 oz cream cheese, at room temp.
2/3 cup granulated sugar
1 teaspoon vanilla
1/4 cup mini semisweet chocolate
1 pieces
1/4 cup blanched slivered almonds,
1 toasted and coarsely chopped

Prepare Roll:
Heat oven to 375 degrees. Line jelly-roll pan with waxed paper. Coat with nonstick cooking spray. Combine the flour, baking powder, salt, cinnamon and nutmeg in a small bowl. Beat eggs in large bowl at medium speed for 2 minutes or until slightly thickened. Beat in sugar, a tablespoon at a time; continue beating until very thick and lemon colored, 5 to 7 minutes. On lowest speed, beat in pumpkin just until blended. With rubber spatula, fold in flour mixture in 2 batches. Spread evenly in prepared pan.

Bake in 375 degree oven for 10 to 12 minutes or until top of cake springs back when lightly touched in center. Generously sieve confectioners' sugar over clean kitchen towel. When cake is done, immediately loosen edges; invert onto towel. Remove waxed paper. Sprinkle cake with additional confectioners' sugar. From a short end, roll up cake with towel, jelly-roll fashion. Let cool on wire rack
for 1 hour.

Meanwhile, prepare filling:
Beat cream cheese, sugar and vanilla in bowl for 5 to 8 minutes until creamy. Stir in chocolate and almonds. Unroll cake. Spread with cheese mixture. Reroll without towel. Refrigerate at least for 4 hours or overnight, covered.

Pumpkin Bar Cake

Today's recipe is...

Pumpkin Bar Cake

4 eggs
15 oz. can pumpkin OR 1-1/2 to 2 c. fresh, cooked, blended pumpkin
2 c. sugar
1 c. salad oil

2 c. flour
2 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg

1/2 tsp. ginger

CREAM CHEESE FROSTING:
1 (6 oz.) pkg. cream cheese
3/4 stick margarine or butter
4 c. powdered sugar
1 tbsp. milk
1 tsp. vanilla

Mix the following ingredients in large bowl: Sift the following and stir into the above: Mix well and pour into greased and floured 9 x 13 pan for cake, 12 x 18 pan for bars. Bake at 350 degrees for 25 to 35 minutes..

Apple Cobbler Cake

Today's recipe is...

Apple Cobbler Cake

6 c. sliced apples
1/4 c. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. chopped nut meats
1 pkg. cake mix (yellow or white)
1 stick oleo or butter, melted

Combine apples, sugar, nutmeg and cinnamon. Add 1/4 cup of the cake mix, stir to coat apples. Place apples in buttered pan, about 9x13 inches. Cover tightly with foil and bake at 350 degrees for 25 minutes. Remove from oven and remove foil. Mix rest of cake mix with nuts. Sprinkle with melted butter. Stir with fork until large crumbs are formed. Spoon over hot apples. Bake 25 to 30 minutes until puffed and golden brown. Serve warm with cream or ice cream.

Caramel Apple Coffee Cake

Today's recipe is...

Caramel Apple Coffee Cake

3 eggs
2 c. sugar
1 1/2 c. vegetable oil
2 tsp. vanilla extract
3 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
3 c. chopped peeled apples
1 c. coarsely chopped pecans

TOPPING
1/2 c. butter or margarine
1/4 c. milk
1 c. packed brown sugar
Pinch of salt

In a mixing bowl, beat eggs until foamy, gradually add sugar. Blend in oil and vanilla. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into a greased 10 inch tube pan. Bake at 350 degrees for 1 hour and 15 minutes or until cake tests done. Cool in pan for 10 minutes. Remove cake to serving platter. For Topping: Combine all ingredients in a saucepan; boil 3 minutes, stirring constantly. Slowly pour over warm cake. (Some topping will run down onto the serving plate.)

Pear Preserve Cake

Today's recipe is...

Pear Preserve Cake

1 c. margarine or butter, softened
2 c. sugar
4 eggs
2 1/2 c. flour, divided
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1 c. buttermilk
1 tsp. vanilla
1 c. chopped pecans
1 c. raisins
1 c. pear preserves

Cream oleo and sugar until fluffy. Add eggs, one at a time, beating after each addition. Combine 2 cups flour, soda, salt and spices; add to creamed mixture alternately with buttermilk. Mix just until blended after each addition. Stir in vanilla. Dredge pecans and raisins in 1/2 cup flour. Stir pecan mixture and pear preserves into batter. Bake in 13x9 pan at 350 degrees for 50-55 minutes. Sprinkle with powdered sugar if desired.

Pear Walnut Cake With Caramel Icing

Today's recipe is...

Pear Walnut Cake With Caramel Icing

1/2 box Duncan Hines Banana cake mix (1/2 box - 2 cups)
1 pkg. (3 3/4 oz.) instant banana pudding
3/4 c. Crisco oil
1/2 c. pear nectar
1/2 c. water
6 eggs
2 med. bananas mashed
1 c. walnuts, chopped

Preheat oven to 300 degrees. Blend first five ingredients. Add eggs, bananas and walnuts. Pour into well greased large tube pan, lined with wax paper. Bake 2 hours.

Top with caramel icing.

CARAMEL ICING
1/2 c. milk
1/2 c. light brown sugar
4 tbsp. margarine
1/2 c. confectioners' sugar
1 tsp. vanilla
Dash of salt

Boil milk, sugar and margarine 3 minutes, stirring constantly. Add confectioners' sugar and vanilla. Spread on warm cake.

Banana Pudding Cake

Today's recipe is...

Banana Pudding Cake

1 or 2 sm. ripe bananas
1 pkg. yellow cake mix
1 pkg. Jell-O instant pudding (banana
cream or vanilla)
4 eggs
1 c. water
1/4 c. oil
1/2 c. chopped nuts

Slice bananas into large bowl; beat until well mashed. Add remaining ingredients. Blend; then beat at medium speed of electric mixer for 2 minutes. Pour into well-greased and floured tube pan. Bake at 350 degrees for 60-70 minutes. Let cool in pan 15 minutes. Remove from pan and finish cooling. Sprinkle with powdered sugar.

Blackberry Bundt Cake

Today's recipe is...

Blackberry Bundt Cake

1 box white cake mix
3/4 c. Crisco or Puritan oil
4 eggs
1 pkg. blackberry (or wild strawberry) Jello
1 pt. frozen blackberries or strawberries, sweetened to make 1 c. juice

Mix all ingredients together and bake at 350 degrees until done.

GLAZE:
Mix 1 1/2 cups confectioners sugar with 1-1 1/2 cups of berries.
Drizzle over cake when cool.

Apple Pound Cake

Today's recipe is...

Apple Pound Cake

1-1/2 c. corn oil
2 c. sugar
3 eggs
2 tsp. vanilla extract
3 c. flour
1 tsp. soda
1 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 c. chopped, peeled apples
1 c. chopped walnuts
1/2 c. raisins

Beat oil, eggs, sugar and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apples, nuts and raisins. Spoon batter into greased and floured bundt pan. Bake at 375 degrees for 1 hour and 15 minutes.

Easter Lemonade Dessert

Today's recipe is a refreshing spring recipe that is perfect for Easter.

Easter Lemonade Dessert

1 envelope unflavored gelatin
1 (6 oz.) can frozen lemonade concentrate
1 (10") tube angel food cake
1/2 c. sugar
2 beaten eggs
Dash of salt
1/4 c. water
1 (14-1/2 oz.) can evaporated milk

Chill evaporated milk and whip. Mix gelatin, sugar and salt. Add eggs and water. Cook and stir until gelatin dissolves, remove from heat. Stir in lemonade concentrate and chill until partially set. Fold in whipped milk. Rub brown crumbs off cake and break into bite size pieces. Cover bottom of 10" tube pan with thin layer of gelatin mixture. Loosely arrange 1/3 of cake pieces on top. Pour 1/3 of remaining gelatin and repeat process. Chill until firm. 12 servings.
