Unique Home-made Valentines!

With Valentine's Day just around the corner, I thought it would be nice to give you some home-made gift ideas for the hard to shop for sweetheart in your life.  How about baking something special to show them how much you care?

Caramel Pecan Fudge
Some of us are caramel lovers!  What can I say?  This caramel pecan fudge looks delicious, and could be adapted to make use of peanuts or walnuts too.  Whatever your favorite nut, your valentine will go nuts over this chocolate concoction.

Chocolate Mousse Crepes
Personally, I could live on crepes.  Yes, I would be the size of the Eiffel Tower, but I would be happy.  This crepe takes the cake for bringing a whole new level of chocolate to the table.  Leave it to the French to think of the most naughty crepe combination possible.

Chocolate Trifle
I am not exactly sure why they call it a trifle, but surely your valentine won't be able to "stifle" their trifle adoration after sampling such a winning blend of chocolate, cream, and...more chocolate!  I am thinking of making this for my valentine...(he's a chocolate lover too!)

Let The Baking Begin!

On your mark, get set...BAKE!  It's hard to believe that Christmas Day is just around the corner. (Like 3 weeks, 5 days and 21 hours, but who's counting?)  It's tradition in my family to give the gift of sweets.  As we get older and start to produce families of our own, it gets more costly to give store bought gifts.  So...we improvise and BAKE!  We give fudge, cookies, candies and high dentist bills!  Seriously, there are some awesome Christmas Goodie Recipes over at Aliciasrecipes.com FREE FOR YOU to sample!

Cranberry Caramel Bars

Today's recipe is...

Cranberry Caramel Bars

1 cup fresh cranberries
2 tablespoons sugar
2 1/3 cups all-purpose flour, divided
1/2 teaspoon baking soda
2 cups uncooked regular oats
1/2 cup sugar
1/2 cup firmly packed light brown sugar
1 cup butter or margarine, melted
1 (10-ounce) package chopped dates
3/4 cup chopped pecans
1 (12-ounce) jar caramel sauce

Preheat oven to 350 F and line a 13x9x2 pan with aluminum foil, leaving a little overhang, and you can lift bars out to cut with no problem.

Combine 2 tablespoons of sugar in a small bowl with the cranberries and set aside. Combine 2 cups of flour and the next four ingredients. Stir in melted butter until crumbly. Reserve 1 cup of this mixture and set aside. Press remaining mixture into bottom of a lightly greased 13x9 baking dish or pan (use a piece of wax paper placed over the top to press down the mixture). Bake at 350 degrees for 15 minutes.

Remove from oven and sprinkle with dates, pecans, and the cranberry mixture. Stir the caramel sauce and the remaining 1/3 cup flour together until smooth, spoon over cranberries. Sprinkle with the reserved 1 cup flour mixture. Bake an additional 20 minutes or until lightly browned.

Cool on a wire rack. Lift out of pan with foil overhang. Cut into bars, makes approximately 24

Caramel Popcorn

Today's recipe is...

Caramel Popcorn

4 Quarts Hot air popcorn (16 cups)
1/4 Cup Karo syrup (dark)
1/2 Teaspoon Salt
1/4 Pound Oleo or butter
1 Cup Brown sugar
1/2 Teaspoon Baking soda

Put oleo, syrup, sugar, and salt in a microwave oven. Bring it to a full boil, then set the timer for 2 minutes and continute to boil. Take it out and quickly stir in baking soda. In the meantime, have the popped corn in a paper bag which has been rolled down from the top. Pour 1/3 of the syrup mixture into the bag of popcorn and shake bag H-A-R-D. Repeat twice - always shaking the bag VERY HARD each time. Unroll the bag and close the bag and shake it HARD again. Microwave it 1 1/2 minutes. Take out and shake HARD. Microwave another minute and shake HARD again. Pour the popcorn onto a cookie sheet and let it cool. Store in a large popcorn container.

Chocolate Turtle Brownies

Brownies! Caramel! And both of these delicious treats combined? Today's recipe makes for a fabulous dessert.


Chocolate Turtle Brownies

2 cups semi sweet chocolate morsels, divided
1/2 stick margarine
3 eggs, slightly beaten
1-1/4 cups flour
1 cup sugar
1/4 tsp. baking soda
1 tsp. vanilla
1/2 cup nuts, chopped
12 caramels
1 Tbsp. milk

Melt 1 cup of the morsels with the margarine over a low heat. Stir in beaten eggs. Add dry ingredients and vanilla. Spread into a greased 9" x 13" dish. Sprinkle with remaining chips and nuts. Bake at 350° for 20-25 minutes. Melt together caramels and milk until smooth. Drizzle over brownies.
