Beef BBQ Casserole

Today's recipe is...

Beef BBQ Casserole

1 lb. ground beef
1/2 c. BBQ sauce
1 c. shredded cheese
16 oz. can pork and beans
1/2 c. chopped onion
8 oz. can refrigerated biscuits

Heat oven to 375. Brown meat and remove any grease. Add pork and beans, bbq sauce, and onions, simmer for 5 minutes. Pour into a lightly greased casserole dish. Cut biscuits in half, place cut sides down, forming circle around edge of the casserole. Top with shredded cheese. Bake 20 minutes.

Almond Peach Smoothie

Almond Peach Smoothie

1 cup skim milk
1 cup sliced peaches
1/2 teaspoon almond extract
1 cup fat-free frozen vanilla yogurt

Combine all ingredients in blender and process until smooth and creamy.
This makes a great breakfast.

Impossible Southwestern Pie

Today's recipe is...

Impossible Southwestern Pie

1 1/2 cups frozen whole kernel corn
8 medium green onions, chopped
1 can (15 ounces) black beans, rinsed and drained
1/3 cup shredded Cheddar
1/2 cup Bisquick
1/2 cup milk
1/2 cup thick-and-chunky salsa
2 eggs
Additional thick-and-chunky salsa

Heat oven to 400F. Grease 9-inch pie plate. Layer corn, onions and beans in pie plate. Sprinkle with cheese. Stir baking mix, milk, 1/2 cup salsa and the eggs until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa.

Tomato Cajun Chicken Salad

Today's recipe is...

Tomato Cajun Chicken Salad

1-1/2 Tbsp. lemon juice
2 cloves garlic, minced
1/2 tsp. thyme
1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. cayenne pepper
1/2 cup non-fat plain yogurt
3 cups cubed, cooked chicken
1 cup thinly sliced green onion
1/2 cup diced green bell pepper
1/2 cup diced celery
3 cups (about 1 1/2 lbs.) seeded and diced fresh California tomatoes

Combine lemon juice and next five ingredients. Beat in yogurt. Gently
fold chicken and next 3 ingredients into dressing. Chill. Just before
serving, fold in tomatoes.

Cream Cheese Cookies

Cream Cheese Cookies

1 c. butter or shortening
2 (3 oz.) pkgs. cream cheese
1 c. granulated sugar
1 tsp. vanilla
2 egg yolks
2 c. flour
1 tsp. salt

Add nuts, if desired. Drop by teaspoons on greased cookie sheets. Bake at 375 degrees for 10 minutes.

Chicken Enchilada Casserole

2 cups grated Cheddar Cheese
2 cups grated Mozzarella Cheese
2 tbsp. olive oil
1 large onion, diced
1 (4 oz.) can chopped green chilies
1 can cream of mushroom soup
4-6 large flour tortillas, each one cut into 6 pie shaped wedges
1 cup salsa, medium or hot
4 cups diced, cooked chicken

Mix the grated cheese together in a bowl. In a large frying pan, saute the onion in the olive oil until soft. Stir in the chilies, mushroom soup, and 1/2 of the cheese. Cook over low heat until the cheese is melted. Lightly grease a 9X13 pan. Line the bottom of the pan with 9 of the tortilla wedges. Spread about 1/2 cup of salsa over the tortilla wedges. Spread about 2 cups of the diced chicken over that, and then pour 1/2 of the cheese sauce over that. Repeat the layers: tortillas, salsa, chicken, cheese sauce. Sprinkle the rest of the cheese on top of everything. Bake, uncovered, at 325 degrees for about 50-60 minutes. It should be bubbly when it's done. Let it stand for at least 10 minutes before you cut into it.

Cornflake Oven Fried Chicken

1 c. crushed corn flakes
1/4 garlic powder
1/2 tsp. onion powder
1/2 tsp. paprika
1-1/2 tsp. Italian seasoning
1 chicken, cut in pieces and skinned

Preheat oven to 350 degrees. Mix cereal and spices. Roll damp chicken in mix and place on nonstick baking sheet. Bake uncovered for 1 hour. Serves 6.

Crock Pot Chicken Italiano

1 whole chicken or parts
1 pkg. spaghetti sauce mix
1 (8 oz.) can tomato sauce
1 c. water
1 can mushroom stems and pieces

Place chicken in crockpot, mix rest of ingredients and pour over chicken. Cook

Peach Creme Cheese Crepes

Today's recipe is...

Peach Creme Cheese Crepes

2 lg. peaches, peeled & sliced
1 (8 oz.) pkg. cream cheese
1/4 c. sour cream
2 tbsp. whipping cream
5 tbsp. brown sugar
3/4 tsp. nutmeg

Peel and slice peaches to make 2 cups; set aside. In another bowl beat cream cheese, sour cream and whipping cream until smooth. Add brown sugar and nutmeg; set aside. Spoon about 1/3 cup of the filling with 3 or 4 peach slices into the center of each crepe (recipe follows). Roll up or fold into quarters. Place on serving platter and dust with powdered sugar. Serve with whipped cream.

EGGY THIN CREPES: In blender combine 3 eggs, 1/2 cup milk, 1/2 cup water, 3/4 cup flour, 1 teaspoon sugar and 1/2 teaspoon salt. Mix until smooth. Bake in 8" crepe pan.

Mango Salsa

Mango Salsa

1 cup tomato, diced
1 cup mango, diced
1/4 cup red pepper, diced
1/4 cup red onion, diced
1/4 cup cilantro, fresh, chopped
3 tablespoons lime juice, fresh
1 tablespoon jalapeño, minced
1/8 teaspoon salt and pepper

Combine and let stand at room temperature for 30 minutes.

Almond Crunch Chicken Salad

Today's recipe is...

Almond Crunch Chicken Salad

1 Pillsbury All-Ready Pie crust (or frozen pie crust)
3 c. cubed, cooked chicken
1 1/2 c. green or red grapes, cut in half
1/2 c. shredded carrot
1/2 c. sliced celery
1 1/4 c. mayonnaise
1/2 tsp. seasoned salt
1 tbsp. lemon juice
*1/4 c. slivered almonds, toasted

Prepare pie crust according to package directions for unfilled one-crust pie. Bake and let cool. In large bowl, combine chicken, grapes, carrots, celery, mayonnaise, seasoned salt and lemon juice; mix well. Spoon into cooled pie crust. Sprinkle with almonds. Store in refrigerator. May be served with shredded lettuce, tomatoes, cucumbers or as desired. *To toast almonds: Bake at 350 degrees for 8-10 minutes or until lightly browned.

Almond Pear Bread

Today's recipe is...

Almond Pear Bread

2 c. sugar
3/4 c. corn oil
3 eggs
3 c. flour, all purpose
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
2 c. fresh grated peeled pears (apples may be substituted when pears are not in season)
1 c. chopped almonds
1/2 tsp. vanilla
1/2 tsp. almond flavoring

Cream sugar, oil; beat in eggs. Sift flour, baking powder, soda, salt and spices. Add grated pears and beat on medium speed until well mixed. Mix in flavorings and almonds until well blended. Bake in 2 greased, floured 9 x 5 x 3 inch loaf pans at 325 degrees for 1 hour and 10 minutes or until done to the touch. Make 2 loaves.

Mediterranean Vegetables

Today's recipe is...

Mediterranean Vegetables

1 tbsp. sweet unsalted margarine
1 1/2 c. sliced onions
1 c. green pepper strips
1/2 tsp. crushed fresh garlic
1 (16 oz.) can low sodium tomatoes, coarsely chopped
2 c. cubed, unpeeled eggplant
1 1/2 c. thickly sliced zucchini
1/4 tsp. thyme leaves
1 bay leaf

Melt margarine in a large heavy pan over medium heat. Add onions, green pepper and garlic. Saute, stirring occasionally until onions are transparent, about 5 minutes. Mix in tomatoes, eggplant, zucchini, thyme, bay leaf and pepper. Cover and simmer over medium low heat, stirring occasionally, until vegetables are tender, about 15 minutes. Remove cover and cook an additional 5 to 10 minutes. Remove bay leaf. Makes 4 servings.

Onion Roasted Potatoes

2 lbs. potatoes - cut into large chunks
1 envelope Lipton Onion Soup Mix
1/3 cup vegetable oil

Preheat oven to 350. In large plastic bag or bowl, add all ingredients. CLose bag and shake or toss in bowl until potatoes are evenly coated. Put in shallow pan and bake, stirring occasionally, 40 minutes or until golden brown. Serves 8

Brown Sugar Syrup For Banana Pancakes

2 tbsp. margarine
1-1/2 c. brown sugar
1 tsp vanilla
1 cup water
1 tbsp cornstarch

Melt together in a saucepan. Dissolve sugar. Add 1 teaspoon vanilla. Add approximately 1 cup water. Heat at medium. Stir 1 tablespoon cornstarch into a little water to make runny paste. Add this to syrup to thicken.

Oven Fried Drumsticks

1/2 c. margarine, melted
1 c. saltine crackers, crushed
2 lbs. or more chicken legs

Heat oven to 400 degrees. Wash and pat dry chicken. Roll to coat each chicken leg in melted margarine. Put cracker crumbs in lunch size paper bag. Drop 3 or 4 chicken legs in paper bag and shake to coat. Spray a baking pan with cooking spray (like Pam) and arrange chicken in a single layer. Bake for 30 to 40 minutes.

Barbecue Chicken

1 chicken in parts

Sauce:
1/4 c. water
1/4 c. vinegar
2 tbsp. ketchup (reduced calorie)
1 tbsp. salt
1/4 tsp. pepper
3 tbsp. minced onions
1 tbsp. paprika
1 tsp. Worcestershire
1/4 t. dry mustard
1/2 tsp. diet sweetener or sugar

Arrange chicken parts in roasting pan. Mix all sauce ingredients together and pour over chicken. Cover chicken loosely with tin foil. Bake at 350 degrees for 1-1/2 hours.

Orange Cream Cheese Biscuits

Today's recipe is...

Orange Cream Cheese Biscuits

3 cups Bisquick or our homemade mix
2 teaspoons grated orange peel
3/4 cup orange juice
1 package (3 ounces) cream cheese, softened
2 tablespoons orange marmalade
Sugar

Heat oven to 450¸F. Mix Bisquick mix, orange peel and orange juice until soft dough forms; beat vigorously 30 seconds. Place dough on surface generously sprinkled with Bisquick mix; roll in Bisquick mix to coat. Knead 10 times. Roll dough 1/2 inch thick. Cut with 2 1/2-inch cutter dipped in Bisquick mix. Place on ungreased cookie sheet. Mix cream cheese and marmalade. Spoon about 1 teaspoon cream cheese mixture onto center of each circle; sprinkle with sugar. Bake 8 to 10 minutes or until golden brown.

Herb Salad Dressing

Herb Salad Dressing

1 tbsp. blue cheese
1 tsp. chives, clipped
1 tsp. fresh dill, clipped or dill seed
1 tsp. parsley, clipped
1/2 tsp. horseradish
1/2 pt. sour cream

Mix cheese, chives, dill, parsley and horseradish into sour cream 1 day before serving. May be kept in covered jar in refrigerator for
several days to improve flavor. Serve on cabbage slaw or sliced tomatoes and cucumbers, if desired.

Yield: 1 cup.

Crock Pot Sweet And Sour Pork

Crock Pot Sweet And Sour Pork

2 tbsp. corn oil
Less than 1/4 c. vinegar
3 tbsp. Cornstarch
1 lg. can pineapple chunks (drained)
2 tbsp. Catsup
1/2 c. green pepper (chopped)
2 lbs. boneless pork (1 inch pieces)
2 tbsp. soy sauce
1/2 c. corn syrup
1 lg. Onion

Brown pork in corn oil. Layer pork, green pepper and onion in crockpot. Mix cornstarch with 3 tablespoons water, add remaining ingredients and pour over pork. Cook on low 4 hours or until tender.

Honey Lime Grilled Chicken

Honey Lime Grilled Chicken

1/2 cup honey
1/3 cup soy sauce
1/4 cup lime juice
4 boneless, skinless chicken breast halves

In a ziploc bag, combine the honey, soy sauce and lime juice; mix well. Add chicken and turn to coat. Seal and refrigerate 30-45 minutes. Drain and discard marinade. Grill chicken, uncovered, over medium heat for 6-7 minutes on each side or until juices run clear.

Apple Pound Cake

Apple Pound Cake

1-1/2 c. corn oil
2 c. sugar
3 eggs
2 tsp. vanilla extract
3 c. flour
1 tsp. soda
1 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 c. chopped, peeled apples
1 c. chopped walnuts
1/2 c. raisins

Beat oil, eggs, sugar and vanilla until well blended. Combine dry ingredients and add to sugar mixture, beating well. Stir in apples, nuts and raisins. Spoon batter into greased and floured bundt pan. Bake at 375 degrees for 1 hour and 15 minutes.

Corn Dogs

1 c. Bisquick
2 tbsp. yellow cornmeal
1/2 tsp. dry mustard
1/4 tsp. paprika
1/8 tsp. pepper
1 egg
1/3 c. milk

Mix well. Dip hot dogs on a stick into batter to coat. Fry 3 minutes in hot fat. Covers about 1 pound of hot dogs.

Coconut Cream Pie

Filling
4 tablespoons granulated sugar
5 tablespoons flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, slightly beaten
1 cup shredded coconut
2 teaspoons vanilla extract
1 baked 9-inch pie shell
meringue
2 egg whites
4 tablespoons granulated sugar
1/2 cup shredded coconut

Filling: Combine sugar, flour and salt and add milk and egg yolks, mixing thoroughly. Cook until thickened. Add the 1 cup coconut and vanilla extract. Cool slightly, then turn into pie shell.

Meringue: Beat egg whites until foamy throughout. Add sugar, 2 tablespoons at a time, beating after each addition until sugar is blended. Then continue beating until mixture will stand in peaks. Pile lightly on filling; sprinkle with the 1/2 cup coconut. Bake at 325 degrees F for 15 minutes or until lightly browned.

Macaroni And Cheese Bake

1 pkg. macaroni, cooked
1/2 stick butter, melted
1 sm. bag potato chips
6 oz. grated Swiss cheese
Salt and pepper to taste
1/2 c. cream
Shredded ham or roast (optional)

Preheat oven to 350 degrees. In bowl, stir macaroni, cheese, salt, pepper, butter, and cream. Pour in buttered baking dish. Crush potato chips and sprinkle on top. (Or use bread crumbs). Bake until golden brown on top, about 20 minutes.

Cheesy Beef Stroganoff

1 pound. Ground beef
3 cups (6 oz) medium egg noodles, uncooked
3/4 lb. (12 oz) Velveeta or store brand
1 can (10 _ oz) cream of mushroom soup
1/4 tsp. pepper

Brown meat in large skillet; drain. Stir in 2-c. water; bring to boil. Stir in noodles. Reduce heat to medium-low; cover. Simmer 8 minutes or until noodles are tender. Add prepared cheese product, soup and pepper; stir until prepared cheese product is melted.

Rhubarb Oatmeal Bars

Crust:
1/2 cup chopped nuts
1 1/2 cups rolled oats
1 cup brown sugar
1/4 teaspoon salt
1 1/2 cups flour
1 cup shortening
1/4 teaspoon vanilla

Filling:
3 cups chopped rhubarb
1 1/2 cups sugar
2 tablespoons cornstarch
1/4 cup water
1 teaspoon vanilla

Make crust: Combine all ingredients until crumbly. Pat half of mixture into 13 x 9 inch baking pan. Make filling: In saucepan combine rhubarb, sugar, cornstarch and water. Cook until clear. Blend in vanilla. Pour over crust. Sprinkle with remaining crumb mixture. Bake at 350 degrees F for 20 minutes.

Strawberry Freezer Jam

2 cups finely crushed strawberries
4 cups sugar
1 pkg. powdered pectin
3/4 cup water

Combine strawberries and sugar, let stand about 20 minutes, stirring occasionally. Combine pectin and water in a small saucepan. Bring to a boil; boil 1 minute, stirring constantly. Ad pectin to fruit mixture; stir 3 minutes. Ladle jam into freeze jars, leaving 1/4 inch head space. Adjust two-piece caps. Let stand at room temperature until set, up to 24 hours. Label and freeze. Yield; about 6 half-pints

Barbecue Polish Sausage

Barbecue Polish Sausage

4 links Polish sausage
1 c. brown sugar
1 c. gingerale or 7-Up
1 c. barbecue sauce

Cut the Polish sausage in small slices. Put in a pan on the top of the stove. Add sugar, ale and barbecue sauce. Simmer for 3/4 hour or until the juice starts to thicken. Be sure the meat is covered with the liquid. Add more sauce if needed.

Cherry Salsa

1/3 cup chopped onion
1/3 cup chopped green pepper
1/3 cup chopped green chiles
1/3 cup dried cherries, chopped
1/3 cup red cherry jam
1 1/2 tablespoons vinegar
1 1/2 tablespoons chopped cilantro

Combine onion, green pepper, green chilies, dried cherries, jam, vinegar and cilantro; mix well. Cover and chill several hours overnight.

Cajun Grilled Ribs

Today's recipe is...

Cajun Grilled Ribs

4 pounds beef spare ribs 
3 tablespoons chili powder
3 teaspoons black pepper
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon thyme
1 teaspoon oregano

Mix together the dry ingredients. Trim and clean ribs. Rub ribs with spices and let sit for 1 hour. Preheat grill. Cook over an indirect heat for about 45 minutes. Turn once. Watch carefully to avoid burning. The ribs are done when a knife passes easily into the meat between the ribs and you can see no, or very little pink.

Butterflied Chops And Potatoes

Today's recipe is...

Butterflied Chops And Potatoes

6 or more medium red potatoes, thickly sliced
1 large onion, quartered and thickly sliced
4 to 6 boneless, butterflied pork chops
1 packet Zesty Italian dressing mix (0.6oz)
salt and pepper to taste

Toss potatoes and onion with salt and pepper; top with pork chops. Sprinkle chops with dressing mix. Cover and cook on low 7 to 9 hours. (a 4 1/2-quart or larger pot will be necessary for the larger number of chops & potatoes.)
Serves 4 to 6.

Impossible Rhubarb Pie

Today's recipe is...

Impossible Rhubarb Pie

3 c. chopped rhubarb
4 eggs
1/2 c. Bisquick
3 tbsp. melted butter
1/4 tsp. salt
1 1/2 c. sugar
1 tsp. vanilla
1 c. milk

Heat oven to 375 degrees. Grease 10" pan, put rhubarb in pan. Blend all remaining ingredients for 3 minutes. Pour over rhubarb. Let set for a few minutes. Bake 40 to 45 minutes.

July 4th Recipes

I'm sorry there hasn't been any daily recipes this week. But don't despair! I'm going to make up for that now.


See, I've been very busy working behind the scenes this week in an effort to make Alicia's Recipes more user friendly. I'm still at it, but wanted to take a break to not only wish you a Happy 4th of July, but give you some great recipe ideas!

7-Up Ice Cream Punch

1 qt. vanilla ice cream
1 qt. sherbet
2 cans pineapple juice
1 qt. 7-Up

Mix all ingredients together in large punch bowl. Let ice cream melt a little before serving.


Frozen Lime Punch

3 (3 oz.) pkgs. lime Jello
13 c. boiling water
4 c. sugar
2 (46 oz.) cans pineapple juice
16 oz. bottle Real lemon juice
2 qts. ginger ale

Dissolve Jello in 9 cups boiling water. Dissolve sugar in remaining 4 cups. Add to Jello mixture. Add juices. Pour into 2 ice cream pails (5 quart) and freeze. Allow some time to thaw before serving, until slushy. Just before serving, add ginger ale. 


Apple Salad

4 large apples, diced 
2 bananas, diced
1 c. miniature marshmallows 
1/2 c. sugar
1/4 tsp. salt
1 egg, beaten
2 tbsp. butter
1-1/2 tbsp. vinegar

Combine apples, bananas and marshmallows. Blend sugar, salt, egg, butter and vinegar. Cook in top of double boiler until thickened; cool. Pour dressing over apple mixture; serve on lettuce, if desired. 


Basil Bean Salad

1 can (15 to 16 oz) kidney beans, rinsed and drained
1 can (15 oz) garbanzo beans, rinsed and drained
1 can (14 1/2 oz) wax beans, drained
1 can (14 1/2 oz) cut green beans, drained
1 medium green pepper, thinly sliced
1 medium onion, thinly sliced
1/2 cup white wine vinegar
1/2 cup vegetable oil
6 tablespoons sugar
1 tablespoon minced fresh basil or 1 teaspoon dried basil
3/4 teaspoon ground mustard
3/4 to 1 teaspoon salt

In a large bowl, combine beans, green pepper and onion. In a small bowl, combine vinegar, oil, sugar, basil, mustard and salt. Pour over bean mixture; toss to coat. Chill for several hours or overnight. Yield: 10 - 12 servings.


Grilled Corn Salsa

6 ears corn
4 tablespoons butter, softened
1 teaspoon chopped fresh thyme leaves
1 small red onion peeled and sliced crosswise into ½-inch thick rings
1 bunch scallions, tops removed
1 jalapeño halved and seeds removed
1 small red bell pepper quartered and seeds removed
1/2 cup olive oil
juice of 2 limes
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh parsley

Preheat charcoal or gas grill to medium. Peel the husk of the corn down from the tip of the ear to the stalk, leaving the husk attached at the stalk. Discard silk. Brush ears all over with butter, sprinkle with salkt and pepper to taste and the thyme. Pull husk back over the ear and tie together using butcher twine. Submerge corn in large bucket of cold water weighing it down with another medium bowl of water, Let soak at least 2 hours. Place corn on the grill gate and grill, turning, about 20 minutes. Let cool. Remove twine and husk from the corn and cut the stalk off. Stand the corn up cut side down, on a cutting board, and cut off the kernels. Toss onions, scallions, jalapeño and bell pepper with one tablespoon of the olive oil, season with salt and pepper and grill until just cooked. Let cool, cut into small dice and place in a small mixing bowl. Add corn, lime juice, remaining olive oil, cilantro, and parsley and toss well.


Grilled Steak with Mustard Marinade

1/3 cup olive oil
1/4 cup red wine vinegar
1/4 cup dry red wine
2 cloves garlic, minced
1 teaspoon dried basil
2 tablespoons hot and sweet mustard
1 tablespoon ketchup
2 pounds boneless sirloin steaks, 1 inch thick

Combine oil, vinegar, wine, garlic, basil, mustard, ketchup in shallow bowl. Add steak. Marinate 1 hour, or refrigerate overnight. Grill steak on oiled grill rack, or broil on oiled broiler pan rack; 5 minutes per side for medium rare.


Lemonade Pound Cake

1 box yellow cake mix
1 sm. box lemon Jello
1 sm. can frozen lemonade
4 eggs
1/2 c. oil
3/4 c. sugar

Dissolve Jello in 3/4 cup of hot water (stir until it is well dissolved). Let cool. Beat together 4 eggs and the 1/2 cup of oil. Mix all these ingredients into the yellow cake mix. Mix well and pour into a tube baking pan. Line pan with greased wax paper sprinkled lightly with flour. Bake at 325 degrees until done (browned on top). Mix small can of lemonade (thawed) with 3/4 cup sugar. When cake is done and still warm pour lemonade mixture over cake. Let cool and remove from pan.


Watermelon Waldorf Salad

2 cups cubed watermelon (about 3/4-inch cubes, seeds removed)
1/2 cup sliced celery
1/2 cup seedless red grape halves
Dash of salt
1/4 cup nonfat coleslaw dressing
2 tablespoons sliced almonds, toasted

This recipe is full of eye-appeal and light, refreshing flavors.

Stir together watermelon, celery, and grapes in bowl. Just before serving, stir salt into coleslaw dressing. Pour mixture over fruit and stir until coated. Sprinkle with almonds.
