Zucchini Bread

Today's recipe is...

Zucchini Bread

3 eggs
1 c. oil
1 tsp. vanilla
2 c. peeled & grated zucchini
3 c. flour
1 tsp. salt
3 tbsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder
1/2 to 1 c. chopped nuts

Beat eggs; blend in oil, sugar and flavoring. Add zucchini. Sift flour with dry ingredients. Beat into first mixture. Fold in nuts. Bake at 325 degrees for 60 to 75 minutes. Makes two loaves. Hint: Black walnuts are great or "cheat" and use regular walnuts (cheaper) and add 1 teaspoon black walnut flavoring. Bread freezes well and makes a great "do-ahead" Christmas gift.
